A perfectly sweet indulgence…
(Makes 16–18)
200g butter
150g (approx. 200ml) natural brown sugar
2 eggs
600–700ml spelt extra fine flour
2 teaspoons baking powder
pinch of salt
100g dark chocolate
Preheat the oven to 200°C.
Cream the soft butter and sugar.
Beat in the eggs one by one.
Mix the dry ingredients and pour them into the mixture through a
sieve, stirring continuously.
Chop the chocolate into coarse chips and stir them into the mixture.
Roll the dough into balls in your hands and put them on a baking sheet lined with baking parchment.
Press the balls lightly into thick cookies.
Cook them in the oven for 10–12 minutes until the cookies have turned golden on the surface but are still soft on the inside.
Allow to cool.
The cookies are best served the next day with a glass of cold milk!
